The PDP Handbook [7] contains many interesting and informative lab assignments. In most cases the answers are provided in text, but students will gain useful insight into the inner workings of network models by first trying to answer the questions themselves and then reading the given solutions. The PDP Handbook comes with either PC compatible or Mac compatible software.
Caudill and Butler [1][2] offer a more recent set of handbooks with accompanying software. The interface is more user friendly than the PDP software but the simulations are less powerful.
